A delicious, FAST and easy to make (vegetarian) dinner.
Stir fry kale, squash and heirloom tomatoes in olive oil to desired softness add Trader Joe's Coconut Green Curry Simmer Sauce and serve over a bed of brown rice. Enjoy!

Quinoa with diced tomatoes (which I am obsessed with this summer) a dollop of pesto all on top of a bed of baby spinach - a healthy and satisfying lunch.
