I've been working on cleaning up my eating habits. My goal is to use more real food and less ingredients in my dishes. Here is a very clean, healthful, and quick lunch or dinner (or hey, even breakfast!)
what you'll need:
- 1/2-1 cup brown rice (or quinoa!)
- 1 avocado
- 3-4 pearl tomatoes (baby roma works too)
- 1 tablespoon coconut oil
- pinch of sea salt
place brown rice into bowl - add coconut oil
dice up avocado in rind and spoon out, coarsely chop up tomatoes and add to the bowl. add sea salt to taste and enjoy!
